What a great way to use up leftover or day-old bread by making bread pudding. This easy to make holiday inspired recipe can use any type of bread you have with dried fruits, nuts and it has all the warm spices of gingerbread.

Ingredients

  • 5 cups (1.25 L) cubed leftover bread (such as egg, raisin, baguette)
  • 1/3 cup (75 mL) chopped pecans (optional)
  • ¼ cup (60 mL) each diced dried apricots and pitted dates or dried figs
  • ¼ cup (60 mL) dried cranberries or golden raisins
  • 4 large eggs
  • 1 ½ cups (375 mL) milk
  • ¼ cup (60 mL) molasses
  • ¼ cup (60 mL) packed brown sugar
  • 2 tsp (10 mL) vanilla
  • ½ tsp (2 mL) each ground cinnamon and cloves
  • ¼ tsp (1 mL) each ground ginger and nutmeg

Orange Marmalade Sauce:

  • 1/4 cup (60 mL) orange marmalade
  • 2 tbsp (30 mL) orange juice
  • 1 tsp (5 mL) lemon juice
  • Pinch cinnamon

Preparation

Sprinkle bread in the bottom of a greased 8-inch (1.5 L) baking dish. Sprinkle pecans, if using, apricots, figs, and cranberries over top and toss with bread. Set aside.

In a large bowl, whisk together eggs, molasses, sugar, vanilla, cinnamon, cloves, ginger and nutmeg until creamy. Whisk in milk until smooth. Pour over bread mixture and press down slightly. Cover and refrigerate for at least 1 hour or up to overnight.

Preheat oven to 375°F (190°C).

Uncover and bake for about 35 minutes or until golden and knife inserted in centre comes out clean.

Orange Marmalade Sauce: Meanwhile, in a small bowl, stir together marmalade, orange and lemon juices and cinnamon. Warm in microwave for 30 seconds or until hot, if desired.
