Turkey Smash Burgers with Green Goddess Spread

Ingredients

Topped with a creamy, herbaceous Green Goddess spread – serve up these tasty turkey smash burgers with your favourite summer side dish, like potato salad or crunchy garden greens.

  • 1/2 cup (125 mL) crumbled feta cheese
  • 1/4 cup (60 mL) chopped fresh mixed herbs (such as parsley, basil, dill and mint)
  • 1 large egg, beaten
  • 1 small clove garlic, minced
  • 1/2 tsp (2 mL) lemon zest
  • 1/4 tsp (1 mL) pepper
  • Pinch salt
  • 1 lb (454 g) ground turkey or chicken
  • 4 brioche burger buns, split (toasted if desired)
  • Lettuce, sliced tomato and sliced red onion
  • Additional lemon zest for garnish, if desired

Green Goddess Spread:

  • ½ cup (125 mL) plain Greek yogurt
  • 1/3 cup (75 mL) finely chopped fresh mixed herbs (such as parsley, basil, mint and dill
  • 1 tbsp (15 mL) lemon juice
  • 2 tsp (10 mL) chopped capers
  • Pinch salt

Preparation

Green Goddess Spread: In a bowl, whisk together yogurt, herbs, lemon juice, capers and salt; refrigerate until ready to use.

In a large bowl, using a fork, mash together feta and herbs. Stir in egg, garlic, lemon zest and pepper. Add turkey and mix well until combined evenly. Divide into 8 equal portions and refrigerate for 15 minutes.

Heat a large cast iron skillet , non-stick skillet or griddle over medium heat. Spray skillet with cooking spray. Add 1 ball of turkey and firmly press down with a spatula. Add another portion or as many as can fit, leaving space around each. Cook, undisturbed for about 2 minutes. Flip patties and cook for another 3 minutes.

Spread bottom of buns with some of the Green Goddess Spread and top each bun with 2 with burger patties. Garnish with lettuce, tomato and onion, if desired. Add remaining Green Goddess Spread on top and more lemon zest, if desired and cover with top bun.

RECIPE TIP

Lightly spray the spatula before pressing the burger patties to help prevent sticking. You can also pre-smash your burgers on some parchment paper and then refrigerate them until you need them.
