Fruited Holiday Buns

Ingredients

These biscuit style buns are filled with walnuts, dates, cranberries, dried apricots and warm spices. They are perfect to enjoy with a cup of tea or coffee on your own or with friends or family during the holiday season.

  • 2 cups (500 mL) all-purpose flour
  • 1 tbsp (15 mL) baking powder
  • 1/4 tsp (1 mL) each ground cloves and ginger
  • 1/4 tsp (1 mL) salt
  • 1/2 cup (125 mL) cold butter, diced
  • 2/3 cup (150 mL) milk (approx.)

Fruited Filling:

  • 1/3 cup (75 mL) butter, very soft but not melted
  • 1/3 cup (75 mL) packed brown sugar
  • 1/2 cup (125 mL) chopped walnuts
  • 1/3 cup (75 mL) each diced dates and dried cranberries
  • 1/3 (75 mL) diced dried apricots
  • 2 tsp (10 mL) ground cinnamon
  • 1/4 tsp (1 mL) each ground cloves and nutmeg

Molasses Ginger Drizzle:

  • 1/2 cup (125 mL) icing sugar
  • 1/2 tsp (2 mL) ground ginger
  • 1 tbsp (15 mL) molasses
  • 3 tsp (15 mL) milk, divided (approx.)

Preparation

Line an 8 inch (1.5 L) square baking dish with parchment paper and lightly spray with cooking spray. Preheat oven to 375°F (190°C).=

In a large bowl, stir together flour, baking powder, cloves, ginger and salt. Cut butter into flour using your fingers until mixture is crumbly looking. Drizzle in milk and stir using fork to combine. Bring dough together and knead gently on lightly floured surface to make smooth dough. Roll out dough on floured surface to about a 14-inch (35 cm) square.

Filling: In a small bowl, stir together butter and sugar. In another bowl stir together walnuts, dates, cranberries, apricots, cinnamon, cloves and nutmeg until well combined. Spread butter mixture evenly all over dough right to the edges. Sprinkle fruit mixture all over and press gently into dough. Roll up dough, jelly roll style and pinch seam along edge. Slice log into 9 equal pieces and place into prepared baking dish.

Bake on the centre oven rack for about 35 minutes or until golden brown. Let cool completely.

Molasses Ginger Drizzle: Meanwhile, whisk together icing sugar, ginger, molasses and 2 tsp (10 mL) milk, adding another 1 tsp (5 mL) of milk until smooth. Drizzle buns before serving.

RECIPE TIP

Depending on what flour you are using, you may need to drizzle a bit more milk into dough or if the dough is too wet knead in a bit of flour. The best thing to do is drizzle the milk in a little at a time and look at the dough and feel the texture to see if it’s holding its shape.

Enjoy these buns freshly made the same day or pop some in the freezer to enjoy at a later date. Wrap well in plastic wrap and foil and tuck into a sturdy container and freeze for up to 3 weeks. Thaw and warm in the oven before serving.
