Beef Kabobs with Quinoa Tabouli for Two

Ingredients

Kabobs are such a delicious way to prepare grilled beef and veggies dressed with a flavourful marinade and served on top of a fresh tasting quinoa tabouli.

  • 2 tbsp (30 mL) minced fresh herbs (such as thyme, rosemary and chives)
  • ½ tsp (2 mL) lemon zest
  • 1 clove garlic, minced
  • 2 tbsp (30 mL) extra-virgin olive oil, divided
  • 8 oz (250 g) Top Sirloin Grilling Steak, cut into 1-inch (2.5 cm) chunks
  • 1 small zucchini, cut into 1-inch (2.5 cm) chunks
  • 1 red or yellow bell pepper, cut into 1-inch (2.5 cm) chunks
  • Pinch each salt and pepper

Quinoa Tabouli:

  • 1/2 cup (125 mL) quinoa, rinsed
  • 3/4 cup (175 mL) water
  • Pinch salt
  • 2 tbsp (30 mL) extra-virgin olive oil
  • 1 tbsp (15 mL) lemon juice
  • 1 small clove garlic, minced
  • 2 cups (500 mL) chopped vegetables (such as cucumber, tomatoes and green onions)
  • 2 tbsp (30 mL) each chopped fresh parsley and mint
  • 1/2 cup (125 mL) crumbled feta cheese

Preparation

Quinoa Tabouli: In a small saucepan, combine quinoa, water and salt. Bring to a boil; reduce heat to low; cover and cook for 10 minutes or until water is absorbed. Fluff with fork into a bowl.

In a small bowl, whisk together oil, lemon juice and garlic. Add chopped vegetables, parsley and mint to quinoa bowl. Add oil mixture and sprinkle with feta; toss to combine. Cover and refrigerate until ready to enjoy.

Combine herbs, zest, garlic and 1 tbsp (15 mL) of the oil in a bowl. Add beef cubes and toss to coat. Cover and refrigerate for 15 minutes or up to 12 hours.

Toss zucchini and peppers with remaining 1 tbsp (15 mL) of the oil. Thread onto soaked wooden skewers alternately with beef cubes. Season all over with salt and pepper.

Grill kabobs over medium-high heat (400F/200C), turning twice or more, for about 10 minutes or until digital instant read thermometer inserted into beef reaches 145°F/63°C for medium-rare doneness.
