Ingredients
These cake-like cookies made with ricotta cheese are light and airy and have both a tangy and sweet flavour with the addition of lemon. A perfect accompaniment for a cup of tea with a friend or loved one.
- 1 cup (250 mL) ricotta cheese
- 1/2 cup (125 mL) granulated sugar
- 1/3 cup (75 mL) milk
- 1/3 cup (75 mL) canola oil
- 1 large egg
- 2 tbsp (30 mL) fresh lemon juice
- 2 tsp grated lemon zest
- 2 cups (500 mL) all-purpose flour
- 1 1/2 tsp (7 mL) baking powder
- 1/4 tsp (1 mL) salt
Glaze:
- 1 cup (250 mL) icing sugar
- 1 tbsp (15 mL) milk (approx.)
- Sprinkles (optional)
Preparation
Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper; set aside.
In a large bowl, whisk together ricotta, sugar, milk, oil and egg until well combined. Whisk in lemon juice and zest. Stir in flour, baking powder and salt until dough forms.
Scoop 1 heaping tbsp (15 mL) of dough at a time onto prepared baking sheet.
Bake for about 10 minutes or until cookies are set and bottoms are golden. Let cool completely. Repeat with remaining dough.
Glaze: In a bowl, whisk together icing sugar and milk until thick glaze forms. Add a little more milk if necessary (should be consistency of glue).
Using a small spoon, drizzle cookies with glaze and sprinkle with decorative sprinkles if desired. Let stand to set until ready to serve.
