Greek Yogurt Mocha Ice Cream
Ingredients
No ice cream machine? No problem when making this no churn ice cream with Greek Yogurt easily at home with just a few ingredients and no fancy tools! Everyone wants a treat to enjoy and with the addition of Oikos High Protein Greek Yogurt you’ll also have the benefit of added protein and calcium!
- 1 ½ cups (375 mL) Oikos High Protein Plain Greek Yogurt
- ½ cup (125 mL) unsweetened cocoa powder, sifted
- 1 can (14 oz) sweetened condensed milk
- 1 tbsp (15 mL) vanilla
- 1 tsp (5 mL) instant coffee granules
- 1 cup (250 mL) 35% whipping cream
- ¼ cup (60 mL) mini chocolate chips or chopped pecans, divided (optional)
- 2 cups (500 mL) chopped fresh fruit such as strawberries, peaches or bananas (optional)
Preparation
In a large bowl, whisk together yogurt and cocoa powder until smooth. Whisk in condensed milk.
In a small bowl, stir together vanilla and instant coffee until dissolved. Whisk into yogurt mixture.
In another bowl, whip cream until firm peaks. Fold into yogurt mixture until well combined.
Pour half of the mixture into a 9 x 5 inch (23 x 13 cm) metal loaf pan; sprinkle with half of the chocolate chips, if using. Pour over remaining yogurt mixture and sprinkle with remaining chocolate chips, if using. Freeze for at least 4 hours or until firm. Remove from freezer and let stand at room temperature for about 10 minutes. Scoop out ice cream into bowls to serve. Serve sprinkled with chopped fresh fruit, if desired.
RECIPE TIP
Ice cream can be made and frozen for up to 2 weeks.
For a hint of caramel flavour, look for the Dulce de Leche sweetened condensed milk and substitute for the regular sweetened condensed milk.
