Air Fryer Sweet Potato Topped Mini Meat Loaves

Ingredients
These colourful meatloaves are a meal in one when served with a side of green beans alongside for an unforgettable meal. Using an air fryer speeds up cooking time so you can dinner done faster.
Mashed Sweet Potatoes:
- 1 lb (500 g) sweet potatoes, peeled and cubed
- 3 tbsp (45 mL) butter
- 1/4 tsp (1 mL) each salt and pepper
- 1/4 cup (60 mL) grated Parmesan cheese
Meat Loaves:
- 1 lb (454 g) Lean Ground Beef
- 1/3 cup (75 mL) grated Parmesan cheese
- 1 green onion, finely chopped
- 1 tbsp (15 mL) prepared horseradish
- 1/4 tsp (1 mL) each salt and pepper
- 1 cup (250 mL) shredded cheddar cheese
- 2 tbsp (30 mL) chopped fresh parsley
- Cooking spray
Preparation
Mashed Sweet Potatoes: In a saucepan, cover potatoes with cold water and bring to a boil. Reduce heat and simmer for about 20 minutes or until tender. Drain well and return to saucepan; add butter, salt and pepper. Mash, using a potato masher, until smooth; stir in Parmesan cheese.
Meat Loaves: Meanwhile, in a large bowl, with a fork combine beef, Parmesan cheese, green onion, horseradish, salt and pepper. (Be careful not to overmix).
Divide mixture into four equal portions and shape into about 4-inch (10 cm) ovals and pat to about 1 inch (2.5 cm) thick. Place in a lightly sprayed air fryer basket, spacing them apart and top each meat loave with the mashed potato mixture.
Set air fryer temperature to 375ºF (190ºC) and bake for about 15 minutes or until a digital instant-read thermometer inserted into the centre of each loaf registers 160ºF (71ºC).
In a small bowl combine cheddar cheese and parsley. Generously sprinkle over top of mashed sweet potato topped meat loaves. Return to air fryer and bake for 2 minutes or until cheese is melted and golden.
Oven Variation: Place mini meatloaves onto a parchment paper lined rimmed baking sheet and top with mashed sweet potatoes. Bake in preheated 375ºF (190ºC) oven for about 25 minutes or until a digital instant-read thermometer inserted into the centre of each loaf registers 160ºF (71ºC). Sprinkle with cheese and parsley mixture and bake for another 5 minutes or until cheese is melted.
Mashed Potato Variation: Substitute yellow fleshed potatoes for the sweet potatoes.
